After reading most of the reviews I thought I'd share my experience in hopes that someone may be encouraged to try this truly delicious, easy and satisfying meal. First of all, try to follow the directions as they are. If you wander off the recipe you might get a stew, onion soup, or bland goulash. I followed the recipe to the "T" except for the frozen veggies; I used fresh. I must say I was a bit hesitant about using onion soup mix along with 1 onion; I feared a tummy ache all night...oh no' I slept very cozy and satisfied. I baked soft rolls to complete this dinner. My husband did prefer it a little spicier as in "hot" but my son LOVED it. Which is what many reviewers' children also say. Do not fear the onion...and by the way, this IS a soup and a very hearty one at that. Excellent recipe!

I have made this twice and both times it was great. I use group sirloin and whole wheat pasta. I have read a lot of reviews that comments on using 1 package of onion soup mix, or it they have used 2 it was "too much". I hope that everyone realizes that the recipe calls for 1 package (1 ounce). When I purchase dry onion soup mix, it comes in 2-2 1/2 ounce packages. So some people may be putting in 5 ounces versus 2 ounces. Just wanted to make note of this. Be sure to read the package. This soup is great. However after trying it both ways, we prefer beef broth instead of the chicken broth.

I have made this a couple of times now, & find that we are increasing each batch as it just seems to get better & better. We also add 5 or 6 garlic cloves to the ground beef before sauteeing & this has become a real "keeper" at our house!

Followed the recipe to a T, even though I was apprehensive about using chicken broth in a beef soup. Glad I did as it had a pleasant taste. As I was cooking this I thought it might have too much water until I added the macaroni and of course it used up some of the liquid (I like a thick soup). Once the macaroni was cooked it was the perfect consistency. Could perhaps use a touch more seasoning of some sort, but overall a good stick to your ribs soup. Will make this again. Update: I adapted this recipe for the slow cooker...I used 4 cans of chicken broth and no water. Added a can of niblet corn with the juice. Added a small can of V8 and 2 packets of low salt beef bouillon. Everything else was the same, except for I did not add the macaroni until the end (boiled separate and added to soup so it wouldn't take up all the liquid). It tasted really good. I still like the original recipe because it's quicker but if you want to use your slow cooker it works good for that too. The only thing about my slow cooker method is that next time I think I will add some water as the macaroni still sucked up the broth even though I added it at the end.

I don't make reviews often but felt this recipe needed one. It's a perfect remedy for a sore throat. I halved the recipe, added some fresh garlic(not for taste but for antibiotic properties)and used vegetarian meat crumbles...Fantastic! Follow the recipe!

This is a great recipe! I took other reviewers' advice and only added one envelope of onion soup. I ADDED a can of kidney beans, a tablespoon of Italian seasoning and a few shakes of garlic powder. This recipe will feed a lot more than four people. We have eaten it for dinner (twice) and now it's on my desk for lunch! This is a keeper!!

This was so delicious! I was a little weary at first with all the onions but the longer it simmers, the better it gets! I didn't have tomato sauce so I used tomato soup and it was still yummy!

I always follow recipies to a T becaue nothing bothers me more than when people write a review on a recipe that they have completely changed. This recipie if I could would have more than 5 stars as it is the best vegetable beef soup I have ever had. Also, it seems like the leaftovers taste better and better each day. I love this soup and it will be the only recipe I use from now on!!!! I must also say too that my 3 year old normally hates soup but he loved this one. I used sea shell noodles in it and he went crazy over this recipe!!!

I make this regularly and always serve with Garlic Bread Fantastique from this site, which is not your typical garlic bread. I use salted butter on the bread and leave out the salt because it's pretty salty already and I'm a salt lover. Ok now about the soup. It's fast, easy, delicious, and cheap. I leave out the macaroni which got mushy the first time I made this, and in its place I use boil in bag minute rice, cooked right in the soup. I like to keep the rice outside of the soup and let people add it to their own bowls if they want it (I do!) Enjoy!

This was a good recipe. I added egg noodles and a can of veg-all to it to make almost a minestrone. There was too much onion in it for our liking and I only added one packet of dry soup mix. Otherwise my family loved it!

This was much better than I thought it would be, while it was cooking. All I could smell was the package of onion soup mix (eh...) But after simmering, it took on the flavor of the mix of all the vegetables more. I did use potatoes instead of macaroni (not big fans) and I think that helped mellow the flavor out also. I started at 5:15 and we ate by 6:00. A big plus in my book. A great tasty recipe to use hamburger and get your veggies too.

This was a very good base but it did need to be "kicked up a notch". I added 4 dashes of Worcestershire, a good amount of garlic, 2 shakes of Cayenne and several cranks of cracked black pepper. I used a small bag of stew veggies and mixed veggies. Served it with freshly baked 4 cheese biscuits. Highly recommend, but be sure to season to your own taste.

Marge I can't tell you how happy I am to find this recipe. I was making this over 35 years ago and unfortunately due to a flood lost the recipe several years ago. This past winter I was thinking about this soup and how much my family loved it, but for the life of me couldn't remember how to make it. Thought it was just passed down, and never thought to look for it on here and here it is!!! It is so quick and easy and absolutely delicious. I remember when I was first married and making this soup and money was tight. Well, it's tight again in these times and this is just perfect. Brought back a lot of very warm memories!! Thank you again.

the perfect soup for a winter day. i was surprised at how this soup tastes so much like a cambells chunky soup but BETTER. Me and Hubby LOVED it! served it and mins later, the whole little pot was Gone! made a few times already, highly recommend it. however, i do change the pasta alot. the first time, i used minute rice, small amount, just enough for it to be swimming around in every ladle but not enough to make it Thick. i like my soups brothy. and i do season the beef when i m browning it, garlic powder, pepper, dash of salt, steak seasoning. does the trick every time :P will keep on making this delicous soup

Saw several comments about how much dry onion soup mix should be used. Now I'm 64 and wear glasses, but..... It says "2 (1 ounce) packages dry onion soup mix" That works out to a total of two packages weighing one ounce each - OR - TWO OUNCES TOTAL. Works for me.

This soup was extremely easy to make & very delicious! I had most of the ingredients on hand & the ones I didn't I was able to use substitutions without jeopardizing the flavor. I don't buy onion soup mix, but I do have Tastefully Simple Onion Onion & I used 4 tbsp to replace the soup mix. I also don't use or buy celery, so I substituted 2 tsp of celery seed. Otherwise I followed the recipe as written. My husband also agreed that it very good. I definitely plan on making this often during the colder months.

It was just okay. I guess I like my vegetable soup to have more of a tomato flavor. This definately had too much onion. Probably 1 pkg. of onion soup mix would have been plenty. Probably will not make again.

This is really good soup. My whole family likes it and they don't agree on much when it comes to food. The only thing I would suggest is that you keep your noodles seperate from the soup and only add them to the bowl before you are ready to eat. The noodles will soak up all of the broth if you don't them they are just mooshy and gross. This recipe makes a good amount of soup too.

I would give this five stars, but the macaroni almost ruined it. I would add it 15 minutes before the end of cooking if at all. I will try it again though

This was SO good! I used Lipton's beefy onion soup mix because that is what I had on hand and also Orzo past instead of macaroni noodles! It is a keep for sure!!!

For a low-carb version, I omitted the noodles ,I only used 3 cups of water, and only used 1 pack of the onion soup mix. I added 1 cup of frozen okra for more veggies. It was perfect.

I made this some time ago and just realized that I forgot to write a review. I remember that this was super good and very easy! However, it was better reheated. Next time I will use more noodles.

Easy and delicious. I used 8 c. water and 4 tsp. chicken bullion, used carrots instead of celery and frozen peas and canned corn instead of mixed veggies(all I had on hand.) I also used those tiny bow tie noodles that you use in turkey noodle soup instead of elbows because that's all I had on hand. I added about 2 TBSP of chopped garlic too.

I have been looking for an easy soup that uses ground beef, this is it. Am making it for a 2nd time tomorrow for after trick or treating, but this time I am going to put it inside a cleaned out pumpkin and put it in the oven on low to serve when we get back.

My family said 4.5 stars but that wasn't an option so 5 stars it is. I used mini shell pasta and they loved it! I also didn't read the part that said to make the soup part first then add the pasta and then the hamburger just before serving. It simmered happily for about 45 minutes before I served it and everyone loved it!

Everyone liked this recipe. I didn't pay much attention to the onion soup quantity. I used one package of Liptons Onion soup which was enough. I also used 1 tablespoon of beef granules and only used 2 cups of water. I did use 4 cups also of the chicken broth. It looked runny at the beginning so I thought 2 cups of water would be enough. I should have used all 4 cups of water. I also used a can of tomato soup instead of tomato sauce. I was worried the soup would have too much of an onion flavour but it didn't. Even my picky 15 yr.old really liked it. I browned the meat in a frying pan and then put everything in a slow cooker for 5 hours on high. Added the macaroni the last hour. Easy and cheap, served with dinner rolls. Michele, Ontario, Canada

Outstanding soup. You would think it took hours to make. Contrary to all the onion soup discussion, Lipton Onion soup is 2-1oz packages to a box. I used both packages and it was spot on. I didn't have celery, so I added some celery seed for flavor. Next time I may sift out the dried onions though and just use real. We will see if the dehydrated one soften up with time.

way too much onion in this soup I burped up onion for at least 3 hrs after eating it just scale back a lot on the onion and season it with onion salt tastes much better and I mean much better.

I thought this recipie was excellent. I altered it a tad and used 2 cans of chicken broth, 2 cans of veggie broth, 2 cans of stewed tomatoes, 1/2 cup of pastina instead of the elbow mac and some Italian seansonings and followed the rest of the recipie as it was submitted. I found this to be full of flavor and very filling. I will definitely be making this all winter. It made about 8 servings.

This recipe was very delicious and so easy to make.I followed the exact recipe,but added fresh string beans.I did let it simmer about 45 minutes. Makes enough for the next day, and WOW, tasted even better. Perfect soup on a cold day!!YUMMY!

Very good, followed the recipe and added some cubed potatoes and Italian seasoning. Also, did not add the macaroni to the soup, I don't like the noodles cooking in the soup, I cook them separately and add them in the bowl when I serve the soup.

I made this recipe tonight for our family and it was delish! I made a few changes because I had to feed 10 people. 2 lbs. of hamburger, i small onion chopped, 2 stalks of celery chopped, 2 packs of dry onion soup mix, 1 can of fire roasted tomatoes, 1 can of stewed tomatoes, 4 cups of chicken broth, 1 lg can of V8 juice, 1 bag of mixed frozen veg., 1 box of frozen spinach thawed, 2 medium size potatoes cut up small, and 1 tsp. garlic pepper, 1 tsp. sweet basil leaves, and noodles ( 2 hands full ) I used country style. Simmer for an hour and serve with chedder garlic bisquits. My family loved it, and certainly going to make it alot!! Thanks for the basic ingredients!! Love it!

Great, especially the next day. I cut up sirloin in place of the hamburger. I browned the sirloin and added the celery and onion with the steak while browning...then added the rest of the ingredients.

I did this in the crockpot and added my own personal touch but it is a good receipe and has endless possibilities. If you don't want to guess with the consistency then just use potatoes instead of the pasta and you know where you stand at all times. Thanks for a great way to use up some ground venison and in addition get a comfort food full of vitamins!

We loved this soup- tasted even better the next day. I used bow tie pasta and added canned tomatoes. I also added garlic and some italian seasoning. It really needs you to add your own seasoning to taste. I also used canned vegetables- whatever your family will eat.

I added so many fresh vegetables to this - green beans, carrots, yellow squash, cabbage - that I ended up using a can of beef broth AND a 28 oz. can of tomato sauce PLUS about a cup of water and had a much bigger pot of soup than I expected! Cute little pipette pasta along with the beef made this a delicious and easy one-pot meal that I shared with the neighbors (my parents). I thought the onion soup (1 pkg) just gave a nice subtle flavor to the broth, and some dried basil rounded out the seasoning without adding additional salt. Save washing an extra skillet and brown the beef in a dutch oven, drain if necessary, then add all of the remaining ingredients and simmer at least 1 hour+ for the best flavor.

Super easy and delicious! My husband RAVED about this soup and told me to put it on the "rotation" which is his highest rating! I didn't have mixed vegetables, so I added some frozen corn, frozen peas, and a can of butter beans. This is a wonderful recipe!

Very good-but the celery was still a bit too crunchy-sauteeing it first would make it perfect! Also, instead of macaroni noodles use the small circular ones....!

I made a few changes and ended with a delicious soup. I always use ground turkey instead of beef in recipes. Instead of the tomato sauce I used seasoned diced tomatoes. I used 3 cups of water. I always start with less water than called for since one can always add more later if needed. One packet of onion soup mix is fine. Great recipe! May I recommend Minor's Soup Bases in place of broths. No waste. Minor's is used by restaurant chefs.

I made this last night made as is. And after the soup base simmered a short while I tasted it and to me it was bland. So I added more things. I cooked the hamb with 3 cloves garlic, and the onion. I used beef broth not chicken. I added 4 dashes worcesterchire sauce a dash cayenne and a few dashes franks hot sauce and also about a tbl chili sauce. Same as ketchup but kicked up a notch. I dont usually modify first time making a recipe but it did need it. Great start base though can do many things with it. I also did not cook macaroni in with soup, makes it to starchy in my opinion and this way you can add as much as you want, and when you reheat it mac wont be so soggy. And it soaks alot of liquid out of soup. I made cornbread with this and it was good hearty meal. And leaving macaroni separate for left overs next day you can make rice to add to it. Tried this the other night. The girls were not pleased with the appearance, but after they tasted it they decided that it will be one of their favorites. I threw in a bag of frozen green beans, corn, carrots and peas. What better way to sneak in those veggies!

Mmmm...this was a really great, quick meal. I didn't have onion soup, celery, or onions on hand, so I just threw in some fresh garlic and a can of stewed tomatoes along with the tomato sauce and frozen veggies. I also added dried thyme, s & p, and a bay leaf. It turned out fantastic!

The just made this recipe for the first time. I made it almost exactly like the recipe, only using a few different herbs and spices that I had around the house and I doubled the recipe since it was for a potluck. It thickened up just like some other commenters had said and had a great flavor. I will make again, especially with the cold Wyoming winter approaching!

I have made this recipe a couple of times. The first time it was a little too strong on the onion soup mix. The second time, I doubled the recipe and used 3 packs instead of 4. It was much better. Great for freezing in bulk. add the noodles to cook when you reheat it. a keeper!!

This one wasn't a hit. I followed the recipe exactly and checked the measurements of the onion soup twice. I think that it reminded me of that diet cabbage soup that I ate too much of in high school, but with hamburger.

Loved it it was easy to make. I did add garlic powder just because I put it in most things. I also put pepper in it after taste testing but not too much it has enough of a spice for the kids without adding very much. Will make again

This is a very good and hearty soup. I followed instructions exactly. Next time I will saute the onions with the ground beef to soften them up. The onions still had a bit of a crunch even after cooking for 1/2 hour.

I so love this soup recipe! I make it often and serve it with crusty buttered french rolls. I throw in a couple of hearty dashes of cayenne pepper to give it a little kick. Depending on what I have on hand, I sometimes use fresh veggies, sometime frozen. If I don't have macaroni, I will dice up a potato to replace it.

Very easy and so good. I did use beef broth because that is what I had and I used kidney beans instead of the frozen vegetable because I didn't have any but hte soup was sooooooo good.

This soup was out of this world and so easy to make. My grandmother always made this soup when I was young. This tasted exactly like my grandmothers. Thank you very much. I will make this again and again as the winter is approaching.

Really good!!! Doubled the recipe to 8. Browned meat with minced garlic, tony's.....salt and pepper....italian seasoning. Added chicken broth....no water....onion soup mix...used 3 cans tomato soup...put in half bag of hash browns....did not drain can of corn...kidney beans...tomatoes....used half a bag frozen peas....few dashes of a-1 and worchestershire.....add macaroni.

We live in Alaska and this has become a favorite during the winter. I substitute ground turkey for the hamburger and throw in whatever veggies we have on hand and the flavor is wonderful. Anything this good and easy that can make 3 kids and adults happy gets 5 stars!!

I made the soup exactly as the recipe is written (except I used beef broth), and it was missing something. It had a blandness, I experimented with several different ingredients in single serving bowls. Garlic (esp fresh minced) does wonders, and so does (believe it or not) ketchup. It must be the the sugar in the ketchup. Next time I will add only 1/2 the onion and 2 cloves of minced garlic to the hamburger before it's browned. I would not add any extra onion, and 2 pkgs of onion soup mix was fine- one would work though. I think a can of kidney beans and or diced tomatoes would be a nice touch. I did not care for the italian seasoning (made it taste like spaghetti sauce). The pasta does tend to overcook, I would add double the amount next time later on. This recipe is a keeper!

pretty good basic recipe, but when i made it exactly by the recipe, it was a bit bland. I added garlic salt and Italian seasonings to taste, and 1 tbsp of sugar and it was DELISH!!!!!! My 9 yr old dd loved it too!

Delicious! Quick and easy and we really enjoyed this soup. I was a little leery with 2 packages of onion soup mix and onion but it came out wonderfully balanced. I served with homemade french bread and it was perfect! I definitely will make this again!

This was soooo easy and delicious. I even added a little more onion soup mix, as some suggested it was bland. I didn't add too much, but maybe another 2 tbsp. of onion soup mix. In my opinion this was great. I have had leftovers (rare for me) and it's still great. Totally, an easy lunch recipe or dinner and a sandwich. I've had it with a grilled cheese! Oh, and I also added some beans (I had leftover pintos and black beans so I added them, any would be a good addition)! Great addition if you are interested!

I was skeptical when I was cooking this, because the aroma was very onion-y (the soup mix powder has a strong aroma at first), but my worries were unfounded. This soup was so incredibly good. I used little shell pasta and followed the recipe exactly. This was so easy--so fast! I couldn't believe how good it was for being such a quick, thrown-together soup. This will be replacing my old veggie soup standby recipe, and we'll be eating it pretty regularly around here. One note: The recipe makes enough to feed an army, and I don't have an army in my house. :) I put the leftovers into freezer-safe plasticware and froze them. A week later, I reheated some for lunch, and it was still delicious. It keeps in the freezer beautifully.

Delicious! I added a can of mixed white/yellow corn, used ground turkey, left out the elbow macaroni and used 99% fat-free broth to make it a little lighter. My daughter and I loved it!!!

This is a very good, hearty soup! My 2 yr old twins loved it! What a great way to get them to eat their veggies. I give it 4 stars because I did have to alter the recipe. I agree with previous posts that the onion flavor is rather strong. I added ketchup to tone it down. I used 1 envelope onion soup mix, 4 c water, 4 c chicken broth, 3/4 c noodles 1c fresh carrots, 2 celery stalks, 1 onion & 14.5 oz can stewed tomatoes, 1c frozen green beans & 1c frozen peas too. I added 1/4 cup catsup to tone down onion flavor. Cooked onion with beef, added 1/4 tsp pepper & garlic powder.

very delicious especially with warm biscuits! I changed the recipe a bit to suit my tastes, and threw everything into the crockpot. Instead of 4 cups of water, I added 1 can of diced tomatoes and the leftover drippings from the browned ground beef. I also didn't have the extra package of dry onion soup mix, so I added some dry italian seasoning, beef bouillon cube (not an entire one necessarily, just to taste), onion powder, and olive oil, as well as about a teaspoon of tomato paste. It turned out great with lots of leftovers!

Marc loved it. Instead of onion soup mix I made my own with 8 teaspoons dried onion flakes 1 1/2 teaspoons dried parsley 1 teaspoon onion powder 1 teaspoon turmeric 1/2 teaspoon celery seed 1/2 teaspoon salt 1/2 teaspoon sugar 1/4 teaspoon ground pepper This equals one ounce. Should be doubled for this recipe.

Great! Quick and easy to make. Good way to sneak veggies into my family. (Kinda heavy on sodium, but not sure how that can be helped.) I used ground turkey instead of beef and quinoa instead of pasta for diet reasons. Still a definite winner!

Yummy, wonderfully easy recipe, thank you! However, after mixing all the ingredients in my stock pot, save for the ground beef, I brought it to a boil, let it simmer for around 30 minutes, added beef granules, thyme and chili powder to give it some backbone and thicken the soup. I then added the beef and let it simmer another 45 minutes or so. Really improved the consistency and flavor. To say the least, there are more than four servings here but it's so tasty, that's a good thing. Thanks again Marge!

Overall the recipe is okay, but I would definately make some modifications if I were to make again. We prefer a little thicker soup so I would reduce the water and add another can of tomato sauce or a can of diced or stewed tomatoes. Also, the broth is a little one dimensional so I would add in some garlic and other seasoning when browning the beef.

This soup is wonderful for several reasons - all ingredients were on hand plus it was fast and easy. I substituted the chicken broth with beef broth and I cut the pasta down to 1/2 cup so it wouldn't absorb the entire broth. I also only added 1/2 lb of minced meat as that was all I had. Yummy!

This was pretty easy to make. I only gave it 3 stars because my kids didn't like it. And I thought it was just ok. I've had better vegetable soup. My husband on the other hand had 3 bowls. It did make alot more than 4 servings though.

This soup is awesome! I used fresh veggies instead of frozen and didn't add the chopped onion. I didn't have tomato sauce, so I used a can of diced tomatoes with spicy red pepper. I used a hand blender to get rid of the chunks and dumped it in! So good and it made it a little spicy.

Delicious soup! I always add a bottle of V 8 juice instead of the tomato sauce. Made a big batch yesterday for guests and everyone loved it!

Great Recipe! I prepared exactly as written except used 1 can of stewed tomatoes and 1/2 can tomatoe soup. Made much more than 4 servings. Everyone ate it up fast!! Thanks.

Only used 1/2 an onion, but followed everything else. It was great and made enough for at least 6 people. Thanks for a great, simple, cheap recipe!

I have to admit when i first read this, like others, i was a little leery of all the onions and the chicken broth, but after reading other reviews i stuck with the origional recipe. It is really good. The whole family liked it and there weren't any leftovers. I think maybe next time i might try a few different spices, it seemed like it might need something to give it that little boost, but it is a great recipe and i will definately make many times again!

I thought it was pretty good, followed the recipe exactly until everything but the noodles were in the pot and realized I needed about 2 more cups broth so I added it and it came out really tasty! Cook the noodles 'al dente' folks, they thicken up a ton after hanging out in the soup. I will make this again on a cold evening. ;) Thanks for the recipe!

I didnt like the taste of all the stuff together, I will keep searching for a better veggie soup
